Due South Knives is the in-house brand for Olde Towne Cutlery. This fillet was made here in our shop at Olde Towne.
Due South Knives 11″ Alaskan fillet in an olive drab liberty wood handle with tan liners, toxic green and jade G-10. Made with 3/32″ 440C stainless steel it has an 11″ hollow ground blade with a worn-in finish and a 16″ OAL.
Liberty Wood is a layered birchwood veneer that has been laminated and stabilized. It is nearly impervious to water. Even when boiled, the wood does not absorb water. If your knife were to take a ride through the dishwasher, fear not. Our test pieces survived numerous cycles with minimal changes in appearance. If there is a nearly indestructible wood for knife handles, Liberty Wood is that amazing product.
This would be a great pick for a kitchen knife or outdoor use when skinning, fishing, etc.
